I have a Ravenbloom Student that is in combat on Abandoned Hall against a 6 might unit. On my Focus, I play a 1E spell (i.e. Stacked Deck). My enemy uses Defy to target my spell. I react with Rebuttal and target their Defy.

Rebuttal resolves; and I choose to pay the 1 rune_rainbow to take control of Defy.

Could I use Defy on Rebuttal?

Yes, Defy can still target Rebuttal.

No, Defy cannot target Rebuttal.

If so and no other items resolve, do I win combat?

Yes, Ravenbloom Student would come out with 8 might and win combat.

No, you would not win combat.
